As our many customers know, the Le Cordon Bleu Signatures Restaurant in Ottawa has been rated as one of the five top restaurants in all of Canada since its opening in 2001. It has also been the recipient of the prestigious Five Diamond rating from CAA/AAA. This fine dining establishment has set a new standard for classic French cuisine and innovative presentation. The Signatures Restaurant has now served its purpose as an “observation” style restaurant forthe Le Cordon Bleu students in Ottawa and we are moving forward with a new concept in fine dining that has been designed to further train our superior level students. As the student population continues to grow at Le Cordon Bleu, the need for a broader concept in fine dining has also grown. In order to satisfy the training requirements of our superior level students we have decided to extend the school’s presence in the Ottawa market. As a result, over the past several months we have performed a market test aimed at giving the students hands on experience under a bistro style operation. The concept is based on an “application” restaurant whereby the superior level students, guided by the Chefs, participate in all aspects of the bistro service. The market test was highly successful as the bistro sold right out at lunch time every day. As the new bistro is more closely linked to the Le Cordon Bleu Culinary Arts School it will be named "Le Cordon Bleu Bistro @ Signatures". In order to prepare for the re-launch, the existing restaurant will close on June 27, 2009 and re-open as the Le Cordon Bleu Bistro @ Signatures on September 7, 2009. The cuisine will continue to be top of the market, service will be impeccable, and, importantly, the prices quite affordable.
